yeast plan any of several single - celled fungi that produce alcoholic fermentation in saccharine liquids.

The medieval distinction between beer (containing hops) and ale (without hops) has now fallen into disuse and beer has come to be used strictly as a generic term including ale, stout, and lager. Stout is top fermented, but is sweet and strongly flavoured with roasted grain ; lager is a light beer , bottom fermented and matured over a longer period.
